Pâtisserie Gilles Marchal

Before opening his own patisserie in 2014, accomplished pastry chef Gilles Marchal spent 25 years perfecting his craft at esteemed kitchens like those in Le Bristol, the Crillon, and the Plaza Athénée. Today, his own destination-worthy shop in Montmartre is a wonderland of madeleine mania, which, in addition to those you will certainly sample, can be found on everything from tablecloths to doorknobs. Feel free to taste other treats, though; Marchal is also regarded for his shortbread cookies and his modern updates to traditional desserts.

Andy’s Notes:

Gilles Marchal credits the success of his madeleines not just to his precise recipes, but to the use of metal molds; if you want to attempt recreating his masterpieces, don’t overlook this detail.
