Shan Goût
Subtle and chic in both design and menu, Shan Goût is a quiet house of quality with a menu as small as its space. Dishes are meticulously crafted with gourmet ingredients and most, the restaurant confirms, take at least foru days of preparation before they can be used: Noodles are handmade by ancient technique, vegetables are house-pickled for a month, pork is marinated for 24 hours, and so on. Steamed eggplant may be the specialty of the house, but the pork and chive dumplings are the runaway favorite.
